Rubio’s Coastal Grill in Encinitas is partnering with the Encinitas Chamber of Commerce to support local students through its Rising Star program and educational initiatives, with Rubio’s donating 30% of all sales from its location Thursday, Sept. 18, to benefit the chamber’s programs.
The fundraiser runs all day and includes dine-in, takeout and delivery orders placed through the Rubio’s app or website. Guests enter the coupon code “Donate” at checkout for their purchase to count toward the fundraiser.
The chamber’s Rising Star program celebrates high school seniors from the San Dieguito Union High School District who embody character, integrity, a love of learning and a commitment to community service. Students are recognized monthly throughout the school year, with all honorees invited to apply for scholarships that will be awarded at the chamber’s annual Salute to Education event in May 2026.
“Through the Rising Star program, we are proud to honor students who go above and beyond both inside and outside the classroom,” said Sherry Yardley, CEO of the Encinitas Chamber of Commerce. “Thanks to Rubio’s and our supportive community, we can continue investing in the next generation of leaders.”
